Recipe: Watercress Soup

Soups at a Chinese meal are served together with the meal and not at the beginning as a starter. Family members would help themselves from one large communal bowl but you may prefer to serve in individual small bowls.

Ingredients

450g spare ribs (chop into bite size pieces)
2 slices of ginger
2 cloves of garlic (bruise whole clove with side of a knife)
salt and pepper to season
2 large bunches or 2 packets of watercress
1-1.5 ltr water

Cooking Method

Serves 4

Rinse the bone fragments from the spare ribs and drain well.

In a large pot bring 1 ltr of water to the boil. Add spare ribs and boil for 1 minute, this should bring the scum to the top of the pot. Remove from heat and discard the water.

Add 1.5 ltr of cold water to the pot together with garlic and ginger. Bring quickly to the boil and then simmer for one hour, season to taste.

Wash watercress and add to boiling stock just before serving
