Recipe: Sriracha Mac 'n' Cheese

This is a great spicy version of the classic Mac 'n' Cheese. You can use any type of pasta with this dish and it works just as well.


500g Pasta, we like Dischi Volanti but you can use any kind
4 Tbsp Butter
4 Tbsp Plain Flour
1 Pint Milk
300g Cheese, we like Cheddar but you can use most other kinds, grated
6 Tbsp Mai Siam Sriracha Sauce

Cooking Method

Serves 4

Boil the pasta, in salted water, in accordance to the packets instructions. Once cooked drain and keep to the side.

In a large saucepan melt the butter and mix in the flour on a medium heat. Continuously stir this until the flour has cooked out and changed colour.


Very slowly then start adding the milk constantly stirring to ensure that you achieve a nice smooth sauce.


Once all the milk has been added, turn down the heat and add the Sriracha sauce and the cheese. Mix well.


Add the pasta to the pan, thoroughly coat with the sauce and serve.


Further suggestions:


Once coated in the sauce, place in a baking dish, top with panko (breadcrumbs) and some more cheese and bake until the top is crispy.
