Know your oyster sauce from your soy sauce?

It’s easy to get into the routine of cooking delicious Oriental food, once you’ve stocked your kitchen cupboards with the essentials. Check out our top recommendations below, with links to buy what you need from our online store.

Fish sauce – most fish sauces consist of anchovies, salt, and not much else. It might not sound appealing and it has a very pungent smell, but it adds a delicious rich and salty flavour to lots of foods.

Shaohsing cooking wine – Chinese rice wine is sweet and predominantly used in hot dishes, marinades and glazes.

Oyster sauce – a thick sauce with a sweet, salty flavour. Made from oysters, it can be used as a dressing for noodles, vegetables, and stir-fries, or as a base for other sauces and marinades.

Sesame oil – made from sesame seeds, this oil has a slightly sweet, nutty flavour. More of a finishing oil rather than a cooking oil, sprinkle sparingly over food just before serving. A little goes a long way.

Soy sauce – a basic and common ingredient in many Asian dishes, light soy is used for saltiness, and the dark variety, for depth and colour. We recommend having both varieties to hand.
